In a skillet, heat up some olive oil and sauté garlic, red bell peppers and onions. Once softened, add in fresh chopped tomatoes. Season with za’atar, sumac, cumin, cayenne pepper, and salt. Mix in fresh cilantro and parsley. The tomatoes should release some liquid but add a little water depending on the consistency you want. Last, mix in your chickpeas. Garnish with feta, fresh parsley, and scallions and serve with your favorite bread!
