Panzanella-Inspired Salad with Za'atar Pita Chips
Ingredients:
1 cup cucumber, diced
1 yellow bell pepper, diced
1 cup cherry tomatoes or diced tomato
¼ red onion, thinly sliced
½ cup mini mozzarella balls (bocconcini), halved if large
1 garlic clove, finely minced
Juice of 1 lemon
2 tablespoons olive oil
Salt and pepper, to taste
1½ cups crushed Terranean zaatar pita chips
Instructions:

Make the Dressing:

In a small bowl, whisk together lemon juice, olive oil, minced garlic, salt, and pepper.

Toss the Salad:

In a large bowl, combine cucumber, bell pepper, tomatoes, red onion, mozzarella, and crushed pita chips.

Mix & Serve:

Pour the dressing over the salad and toss well until everything is coated and the pita chips begin to soften slightly.

Serve immediately for crunch or let sit for 10–15 minutes for a more bread-salad texture.
