Panzanella-Inspired Salad with Za'atar Pita Chips

Ingredients:

1 cup cucumber, diced

1 yellow bell pepper, diced

1 cup cherry tomatoes or diced tomato

¼ red onion, thinly sliced

½ cup mini mozzarella balls (bocconcini), halved if large

1 garlic clove, finely minced

Juice of 1 lemon

2 tablespoons olive oil

Salt and pepper, to taste

1½ cups crushed Terranean zaatar pita chips


Instructions:

  1. Make the Dressing:

    • In a small bowl, whisk together lemon juice, olive oil, minced garlic, salt, and pepper.

  2. Toss the Salad:

    • In a large bowl, combine cucumber, bell pepper, tomatoes, red onion, mozzarella, and crushed pita chips.

  3. Mix & Serve:

    • Pour the dressing over the salad and toss well until everything is coated and the pita chips begin to soften slightly.

    • Serve immediately for crunch or let sit for 10–15 minutes for a more bread-salad texture.
