Recipe: Lemon Garlic Chicken Dinner (Djej a Batata)

INGREDIENTS
- 2 medium potatoes
- 1 1/2 pound boneless, skinless chicken thighs
- 1 medium onion, diced
- 8 cloves garlic diced
- 1/4 cup lemon juice
- 1/2 tbsp oregano
- 1/2 tbsp Terranean Herbs & Spices za'atar
- 1/4 cup vegetable oil
- 1 1/2 tbsp salt
- 2 tbsp olive oil
INSTRUCTIONS
- Dice the onion.
- Drizzle oil in a glass baking dish and add the diced onion.
- Slice potatoes into medallions and add over the onion.
- Add salt and pepper, then stir.
- To prepare the chicken, dice into 1 inch pieces.
- Add 1 tablespoon olive oil, salt, za’atar, and oregano and mix with the chicken.
- Add the chicken over the potato and onion.
- To make the dressing with a mortar and pestle: mash garlic, salt, oregano and za’atar, then add the oil and lemon juice.
- Pour the dressing over the chicken.
- Cover the tray or dish with foil and put on the second to bottom rack, bake at 400 Fahrenheit for 35 minutes. Broil for 5 minutes.
