Recipe: Lemon Garlic Chicken Dinner (Djej a Batata)

This traditional Lebanese dish of baked chicken with potatoes in a lemony garlic sauce is a feast for your tastebuds and is sure to have your family asking for seconds. A complete meal and easy to prepare, our YouTube channel has all the visuals you need to make this delicious dinner. 

INGREDIENTS

  • 2 medium potatoes  
  • 1 1/2 pound boneless, skinless chicken thighs 
  • 1 medium onion, diced 
  • 8 cloves garlic diced
  • 1/4 cup lemon juice
  • 1/2 tbsp oregano
  • 1/2 tbsp Terranean Herbs & Spices za'atar 
  • 1/4 cup vegetable oil
  • 1 1/2 tbsp salt
  • 2 tbsp olive oil 

INSTRUCTIONS

  1. Dice the onion.
  2. Drizzle oil in a glass baking dish and add the diced onion. 
  3. Slice potatoes into medallions and add over the onion. 
  4. Add salt and pepper, then stir.
  5. To prepare the chicken, dice into 1 inch pieces. 
  6. Add 1 tablespoon olive oil, salt, za’atar, and oregano and mix with the chicken. 
  7. Add the chicken over the potato and onion. 
  8. To make the dressing with a mortar and pestle: mash garlic, salt,  oregano and za’atar, then add the oil and lemon juice.
  9. Pour the dressing over the chicken. 
  10. Cover the tray or dish with foil and put on the second to bottom rack, bake at 400 Fahrenheit for 35 minutes. Broil for 5 minutes. 
  11. Serve and enjoy, sahtain!
