Recipe: Vegan Whipped Feta with Za’atar & Roasted Tomatoes

INGREDIENTS

  • 2-3 medium sized quartered tomatoes or 1 pint of cherry tomatoes

  • 2 tablespoons olive oil

  • 4 garlic cloves, chopped or crushed

  • A handful of fresh herbs like dill and mint, to your preference

  • 1 tsp salt

  • 1 tsp freshly cracked black pepper

  • 1 packet of vegan feta cheese, crumbled: Violife’s 8oz feta is a good option

  • 4 tbsp of vegan sour cream: try Follow Your Heart

  • 1 tbsp of vegan mayo: try Vegenaise from Follow Your Heart

  • 1/4 cup extra virgin olive oil

  • 1 medium lemon, zested & juiced

  • 2 cloves of garlic

  • 1/2 tsp salt

  • 1/4 teaspoon fresh cracked black pepper

  • 1 tsp Terranean Herbs & Spices Lebanese za’atar for garnish

    INSTRUCTIONS

  1. Preheat oven to 400 Fahrenheit. On a lined baking sheet, place the tomatoes and drizzle with olive oil, salt, and pepper. Add the crushed garlic cloves, tossing to combine. Roast for 20 minutes and then set aside to cool.

  2. In the blender or in a food processor, combine the feta, sour cream, mayonnaise, and garlic, pulsing until the mixture is smooth. Drizzle in the olive oil while pulsing. Then add the lemon juice, zest, salt and pepper. Process until smooth and airy.

  3. Transfer whipped feta to a serving dish, refrigerating for 20 minutes.

  4. Top off whipped feta with roasted tomatoes. Drizzle with more extra virgin olive oil if

    desired. Sprinkle za’atar, fresh herbs, and more lemon zest. Enjoy with fresh pita bread, crackers, cucumbers, or freshly toasted bread!
