Elote-Inspired Dip with Terranean Pita Chips
Ingredients:
1½ cups corn (fresh, canned, or frozen & thawed)
¼ cup chopped fresh cilantro (plus extra for topping)
⅓ cup sour cream
4 oz cream cheese, softened
¼ cup crumbled feta cheese
Juice of ½ lime
Salt and black pepper, to taste
Tajín, for topping
Terranean pita chips, for serving
Instructions:

Make the Dip:

In a mixing bowl, combine corn, cilantro, sour cream, cream cheese, feta, and lime juice.

Season with salt and pepper to taste.

Stir until everything is well combined and creamy.

Garnish:

Top with a sprinkle of fresh cilantro and a generous dash of tajín.
