Falafel Sandwich with Zaatar Crunch

Ingredients:

1 pita bread 

3-4 falafel balls 

2-3 tablespoons tahini lemon dressing (recipe below)

Pickles, sliced

Pickled turnips, sliced

1-2 radishes, thinly sliced

Terranean Zaatar Pita Chips, crushed

Tahini Lemon Dressing:

1/4 cup tahini

2 tablespoons fresh lemon juice

2-3 tablespoons water (adjust for desired consistency)

1 garlic clove, minced

1/4 teaspoon salt (To taste)

1/4 teaspoon ground cumin (optional)


Instructions:

  1. Prepare the Dressing: Whisk together tahini, lemon juice, water, minced garlic, salt, and cumin (if using) until smooth and creamy. Adjust the water to reach your preferred consistency.
  2. Assemble the Sandwich:
    • Warm the pita bread if desired.
    • Add the falafel balls, drizzle with the tahini lemon dressing, and layer with pickles, turnips, and radish slices.
    • Sprinkle generously with crushed Terranean Zaatar Pita Chips for a satisfying crunch.
  3. Roll and Serve: Fold the pita around the fillings, slice in half if desired, and enjoy immediately.
