Mediterranean Salsa Dip with Terranean Pita Chips

Ingredients:

½ cup cucumber, finely diced

½ yellow bell pepper, finely diced

¼ cup red onion, finely diced

½ cup tomato, finely diced (seeds removed if desired)

¼ cup kalamata olives, finely chopped

Juice of 1 lemon

1–2 tablespoons olive oil

Salt and pepper, to taste

Terranean pita chips, for dipping


Instructions:

  1. Prep the Ingredients:

    • Finely dice the cucumber, bell pepper, onion, tomato, and olives so they're salsa-sized and easy to scoop.

  2. Mix the Salsa:

    • In a bowl, combine all diced veggies and olives.

    • Drizzle with lemon juice and olive oil.

    • Season with salt and pepper and stir to combine.

  3. Serve:

    • Plate the salsa in a shallow bowl and serve with Terranean pita chips for dipping.
