Pita Chip Breadcrumb Stuffed Mushrooms

Ingredients:

12-15 Baby Bella mushrooms, stems removed

4 oz goat cheese, softened

1/2 cup fresh spinach, chopped

1/4 cup cherry tomatoes, finely chopped

Terranean Zaatar Pita Chips, blended into fine breadcrumbs

Salt and pepper, to taste

1-2 tablespoons olive oil (optional, for extra moisture)


Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C).

  2. Prepare the Filling:

    • In a medium bowl, combine the goat cheese, chopped spinach, cherry tomatoes, and a pinch of salt and pepper. Mix until well combined.

  3. Stuff the Mushrooms:

    • Spoon the goat cheese mixture into the mushroom caps, pressing it in firmly.

    • Top each mushroom with a generous sprinkle of the Terranean Zaatar Pita Chip breadcrumbs for a savory, crunchy finish.

  4. Bake:

    • Arrange the stuffed mushrooms on a baking sheet.

    • Drizzle with a little olive oil if you prefer a slightly richer flavor.

    • Bake for 15-20 minutes, or until the mushrooms are tender and the topping is golden.

  5. Serve and Enjoy:

    • Let cool slightly before serving. These are perfect as a party appetizer or a flavorful side dish.
