Recipe: Orzo Feta Za’atar Salad

INGREDIENTS
- 1 cup orzo
- 1 cup feta
- 14 oz. can of artichoke hearts, chopped
- 10 oz. cherry tomatoes, sub-grape tomatoes, cut in half
- 15 oz. canned chickpeas
- 1/2 English cucumber, diced
- For the dressing:
- 1/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar, sub white wine or apple cider vinegar
- 1 tsp lemon juice
- 1/2 tsp garlic powder
- 1/4 tsp Terranean Herbs & Spices za’atar
- 1/4 tsp dried basil
- salt and pepper to taste
INSTRUCTIONS
- Cook Orzo per package instructions. Run under cold water when complete.
- Add the salad dressing ingredients to a jar and give it a good shake.
- Add the orzo and salad ingredients in a bowl, including the artichoke, tomatoes, chickpeas, and English cucumber. Pour the dressing and toss all the ingredients together. Crumble with feta before serving. Enjoy, sahtain!
