Recipe: Orzo Feta Za’atar Salad

INGREDIENTS

  • 1 cup orzo
  • 1 cup feta  
  • 14 oz. can of artichoke hearts, chopped
  • 10 oz. cherry tomatoes, sub-grape tomatoes, cut in half
  • 15 oz. canned chickpeas 
  • 1/2 English cucumber, diced 
  • For the dressing:
    • 1/4 cup extra virgin olive oil
    • 1/4 cup red wine vinegar,  sub white wine or apple cider vinegar
    • 1 tsp lemon juice
    • 1/2 tsp garlic powder
    • 1/4 tsp Terranean Herbs & Spices za’atar 
    • 1/4 tsp dried basil  
    • salt and pepper to taste

INSTRUCTIONS

  1. Cook Orzo per package instructions. Run under cold water when complete.
  2. Add the salad dressing ingredients to a jar and give it a good shake. 
  3. Add the orzo and salad ingredients in a bowl, including the artichoke, tomatoes, chickpeas, and English cucumber. Pour the dressing and toss all the ingredients together. Crumble with feta before serving. Enjoy, sahtain!
