Recipe: Za’atar Roasted Carrots with Feta Dip

Skip the crudites: roasted carrots get a flavorful tang from za’atar with their own inherent sweetness amplified in the oven. INGREDIENTS

  • 1 lb carrots, peeled and sliced 
  • 2 tbsp Terranean Herbs & Spices za’atar 
  • Salt and pepper, to taste
  • Olive oil
  • For the feta dip:
    • Feta cheese
    • Ricotta
    • Lemon juice
    • Za’atar 
    • Olive oil
    • Salt and pepper

INSTRUCTIONS

  1. Preheat the oven to 400 Fahrenheit.
  2. For the carrots, toss them together with the salt, pepper, olive oil, and za’atar.
  3. Bake for 30 to 35 minutes, flipping halfway through. 
  4. While the carrots roast, begin making the feta chip using a blender. 
  5. Add the dip ingredients together and blend. 
  6. Serve with our [pita chips] and carrots, sahtain!
