Recipe: Za’atar Roasted Carrots with Feta Dip
Skip the crudites: roasted carrots get a flavorful tang from za’atar with their own inherent sweetness amplified in the oven. INGREDIENTS
- 1 lb carrots, peeled and sliced
- 2 tbsp Terranean Herbs & Spices za’atar
- Salt and pepper, to taste
- Olive oil
- For the feta dip:
- Feta cheese
- Ricotta
- Lemon juice
- Za’atar
- Olive oil
- Salt and pepper
INSTRUCTIONS
- Preheat the oven to 400 Fahrenheit.
- For the carrots, toss them together with the salt, pepper, olive oil, and za’atar.
- Bake for 30 to 35 minutes, flipping halfway through.
- While the carrots roast, begin making the feta chip using a blender.
- Add the dip ingredients together and blend.
