Stuffed Avocado with Za'atar Pita Chips
Ingredients:
2 ripe avocados, halved and pitted
½ yellow bell pepper, diced
1 small tomato, diced
¼ cucumber, diced
2 tablespoons red onion, finely chopped
6–8 kalamata olives, chopped
1 tablespoon olive oil
1 teaspoon balsamic glaze
Juice of ½ lemon
Salt and pepper, to taste
2 tablespoons crushed Terranean za'atar pita chips (plus extra whole chips for serving)
Instructions:

Prepare the Filling:

Scoop a bit of the avocado flesh out of each half and dice it.

In a bowl, combine the diced avocado with bell pepper, tomato, cucumber, red onion, and kalamata olives.

Drizzle with olive oil, balsamic glaze, and lemon juice. Season with salt and pepper to taste.

Toss gently to combine.

Stuff the Avocados:

Spoon the filling back into the avocado halves.

Top & Serve:

Sprinkle each avocado with crushed za'atar pita chips.

Plate with whole Terranean pita chips on the side for dipping.
