Stuffed Avocado with Za'atar Pita Chips

Ingredients:

2 ripe avocados, halved and pitted

½ yellow bell pepper, diced

1 small tomato, diced

¼ cucumber, diced

2 tablespoons red onion, finely chopped

6–8 kalamata olives, chopped

1 tablespoon olive oil

1 teaspoon balsamic glaze

Juice of ½ lemon

Salt and pepper, to taste

2 tablespoons crushed Terranean za'atar pita chips (plus extra whole chips for serving)


Instructions:

  1. Prepare the Filling:

    • Scoop a bit of the avocado flesh out of each half and dice it.

    • In a bowl, combine the diced avocado with bell pepper, tomato, cucumber, red onion, and kalamata olives.

    • Drizzle with olive oil, balsamic glaze, and lemon juice. Season with salt and pepper to taste.

    • Toss gently to combine.

  2. Stuff the Avocados:

    • Spoon the filling back into the avocado halves.

  3. Top & Serve:

    • Sprinkle each avocado with crushed za'atar pita chips.

    • Plate with whole Terranean pita chips on the side for dipping.
