Recipe: Sweet & Savory Za’atar Muffins

INGREDIENTS

225g plain flour

100g sugar

75g melted butter

180g full fat yogurt

40 ml whole milk

1egg
-
30g Terranean Herbs & Spices za’atar

40 ml olive oil
-
1 & 1⁄2 tsp baking powder

1⁄2 tsp baking soda
INSTRUCTIONS

Beginning with the dry ingredients, add the sugar to the flour in a bowl. Then add the baking powder and baking soda. Mix to combine.

In a separate bowl, add the wet ingredients. Combine the butter with the yogurt and milk. Add the egg and mix to combine.

Add the wet ingredients to the dry ingredients and mix until just combined.

Add in the za’atar and olive oil and mix into a batter. PLace in the refrigerator for 30
minutes to allow gluten to develop.

Spoon the batter into 8 cupcake cases (line a cupcake sheet). Fill four empty holes with
boiling water to prevent a tough crust from forming.

Bake at 400 Fahrenheit/200 Celsius for five minutes, then lower the oven temperature to
340 Fahrenheit/170 Celsius and continue baking for another 15 minutes.

Remove from the oven, allowing to cool. Serve and enjoy!
