Terranean Pita Chip Fatteh

 

Ingredients:

Terranean pita chips

1 can chickpeas, drained and rinsed

2 cups plain yogurt

2-3 tablespoons tahini

2 tablespoons lemon juice

2 garlic cloves, minced

1/4 cup pine nuts or slivered almonds, toasted

2-3 tablespoons olive oil

Salt and pepper, to taste

Fresh parsley, chopped (optional)

Ground sumac or paprika (optional, for garnish)


Instructions:

  1. Prepare the Yogurt Sauce:

    • In a bowl, whisk together the yogurt, tahini, lemon juice, minced garlic, and a pinch of salt until smooth and creamy.

  2. Heat the Chickpeas:

    • Warm the chickpeas in a small pan over medium heat with a bit of olive oil and a pinch of salt.

  3. Assemble the Fatteh:

    • Spread the Terranean pita chips on a large serving platter or bowl.

    • Layer the warm chickpeas over the chips.

    • Drizzle the yogurt sauce generously over the top.

  4. Add the Finishing Touches:

    • Sprinkle the toasted pine nuts or almonds over the yogurt.

    • Garnish with chickpeas, chopped parsley and a sprinkle of sumac or paprika if desired.

  5. Serve Immediately:

    • Enjoy while the pita chips are still crispy for the perfect combination of creamy, crunchy, and savory.
